Ingredients:

  • 1 cup sweetened mango pulp
  • 1/4 cup jaggery/ Sugar
  • 1/4 tsp cardamom powder
  • A pinch of salt
  • 1 tbsp oil

Instructions:

  1. First of all, take sweetened mango pulp, and jaggery in a mixing jar, and mix it well.
  2. In a saucepan, add that mixture and cook on low heat until the mixture thickens only for 5 to 7 minutes only.
  3. Add cardamom powder and a pinch of salt to the mixture and mix well.
  4. Once the mixture is ready.
  5. Take out that mango mixture in a flattened dish greased with oil.
  6. Flatten the cooked mango mixture in that greased dish and spread it nicely. 
  7. Let it dry in the hot sunlight for 2 days, if it won't be possible to dry in sunlight then, you can use the microwave oven temperature with 100Farhat for at least 4 to 5 hours.
  8. Let it cool and serve the Aamba Poli.
  9. Repeat the process with the remaining mixture.

Your delicious Aamba Poli is now ready to be served. Enjoy it as a dessert or a sweet snack!

Ingredients:

  • 2 cups hung curd
  • 1 cup mango pulp
  • 1 cup powdered sugar
  • 1/4 teaspoon cardamom powder
  • Saffron strands for garnishing (optional)

Instructions:

  1. To make hung curd, tie 2 cups of plain curd in a cheesecloth and hang it for 2-3 hours to remove excess water.

  2. Once the curd is hung, transfer it to a mixing bowl and add 1 cup of mango pulp to it. Mix well using a spatula or a whisk.

  3. Add 1 cup of powdered sugar and 1/4 teaspoon of cardamom powder to the mixing bowl and mix well again.

  4. Keep mixing the ingredients until the sugar is completely dissolved and the mixture is smooth and creamy.

  5. Cover the mixing bowl with a cling wrap or a lid and refrigerate for at least 2-3 hours to chill.

  6. After the aamrakhand has chilled, take it out of the refrigerator and mix it well again.

  7. Garnish with some saffron strands (optional) and serve chilled.

Puran Poli is a sweet Indian flatbread that is typically made during festivals and special occasions. Here is a step-by-step recipe to make Puran Poli

Ingredients:

For the filling:

  • 1 cup chana dal (split Bengal gram)
  • 1 cup jaggery (grated)
  • 1/2 tsp cardamom powder

For the dough:

  • 2 cups wheat flour
  • 1/4 tsp turmeric powder
  • 1/4 tsp salt
  • Water, as required
  • Ghee, for cooking

Instructions:

1.     Wash the chana dal and soak it in water for at least 2 hours. Drain the water and cook the dal in a pressure cooker with 2 cups of water for 3-4 whistles or until it becomes soft and mushy.

2.     Drain any excess water from the cooked dal and mash it well using a potato masher or a spoon.

3.     Heat a pan on medium heat and add the mashed dal, grated jaggery, and cardamom powder. Mix well and cook for 5-6 minutes or until the mixture thickens and the jaggery melts completely. Remove from heat and allow it to cool.

4.     In a mixing bowl, add the wheat flour, turmeric powder, and salt. Mix well and add enough water to knead it into a smooth and soft dough.

5.     Divide the dough into equal-sized balls and flatten each ball into a small disc using your palms. Place a spoonful of the filling in the center of the disc and wrap the edges of the dough over the filling to form a ball.

6.     Dust the dough ball with some flour and roll it out into a thin circle, using a rolling pin.

7.     Heat a griddle or a tawa on medium heat and place the rolled-out dough on it. Cook until the bottom side is golden brown and then flip it over and cook the other side.

8.     Spread some ghee on top of the cooked Puran Poli and serve hot.
